Cooking & Recipes
Easy access and somewhat healthy snacks to grab on the go are the purpose of this portion of the class. Our goal it to make a few snacks that could easily be kept in a refrigerator to pull out when you need a snack without having to make all that mess again for a single snack. This is how a lot of busy families do entire meal plans. Some plan & prep for a week; others plan & prep for up to a month & use the freezer to be ready to go. We're going to do this on a smaller scale.

Taco Dip
You need: 16 oz. container cottage cheese (smaller curd) 8-16 oz cream cheese (low fat is fine) 1 packet taco seasoning 8 oz. shredded cheddar or Mexican cheese 1/2 c. chopped tomatoes (Roma) 1/2 c. chopped bell peppers (any color) 1/3 c. sliced green onions 1/3 c. sliced black olives Steps:

You need: 16 oz box of pasta (cooked, rinsed & drained) 16 oz bottle of Italian dressing (light) 1 T. Italian seasoning 1 cucumber, peeled & chopped 1 c. chopped tomato 1/2 c. chopped green pepper 1/2 c. chopped onion 1/2 c. chopped cauliflower 1/2 c. chopped broccoli (Optional: 1 c. diced cheddar cheese & 1 c. diced pepperoni) Steps:
